Salsa Salmoriglio alla Siciliana

Ingredients:

• 100 ml of extra virgin olive oil
• 2 cloves of garlic
• 2 tablespoons dried oregano
• Juice of 1 lemon
• 1 fresh green hot pepper (optional)
• Salt to taste
• Ground black pepper to taste

Preparation

Prepare the Ingredients:

Break up the garlic cloves. Squeeze the juice from the lemon and, if hot chilli pepper is used, chop it finely.

Mixing the Ingredients:

In a bowl, combine the extra virgin olive oil, chopped garlic, oregano, lemon juice and chopped chilli pepper. Add a pinch of salt and ground black pepper to taste.

Emulsify the sauce:

Stir the ingredients vigorously with a whisk or fork until a homogeneous sauce is obtained.

Serve:

Using the Salmoriglio sauce to marinate or season grilled meat or fish.
